So easy and so satisfying. These marshmellow based treats can be kept frozen for up to 3 months.

The apricots and the coconut add a fruity tinge.

Ingredients

  • 100g Dry Apricots
  • 100g Crushed Milk Arrowroot Biscuits
  • 50g Small Marshmellows
  • 1/2 Cup Condensed Milk
  • 1/2 Tbsp Vanilla Essence
  • 150g Shredded Coconut

Directions

  1. Cut marshmellows into small diced pieces
  2. Combine all ingredients except coconut
  3. Mix thoroughly and then form into logs
  4. Roll in coconut
  5. Roll in glad wrap and continue to form logs
  6. Refrigerate ( Preferably overnight )
  7. Re-Roll once frozen to get excellent log form
  8. Remove the glad wrap
  9. Slice once set
