This loaf is the perfect accompanyment for either soup starter or a light tomato pasta. The tastes and textures are exquisite. Soft warm bread inside with a chewy/crusty combo layered on the outside.

Three could be cooked in the oven at once very inexpensively….impressing all.


  • 1 Vienna Loaf
  • 1/2 Cup of Grated Cheddar Cheese
  • 2 Tbsp grated Parmesan Cheese
  • 1 Shallot, finely sliced
  • 2 Rindless Short cuts, diced
  • Salt and Pepper to Taste


  1. Cut the vienna loaf diagonally accross the top to a depth of about 3cms
  2. Cut back the opposite diagonal to form a diamond on the top of the loaf
  3. Brown the bacon in a small pan
  4. Combine the bacon, shallots, onion and cheeses in a bowl
  5. Press into the diamonds on the top of the loaf
  6. Salt and Pepper to taste
  7. Cook in a 180c Oven for approx 15mins, or until the cheese is melted and the bacon has crisped
