Bacon & Shallot Savoury Bread

This loaf is the perfect accompanyment for either soup starter or a light tomato pasta. The tastes and textures are exquisite. Soft warm bread inside with a chewy/crusty combo layered on the outside.

Three could be cooked in the oven at once very inexpensively….impressing all.

Ingredients

  • 1 Vienna Loaf
  • 1/2 Cup of Grated Cheddar Cheese
  • 2 Tbsp grated Parmesan Cheese
  • 1 Shallot, finely sliced
  • 2 Rindless Short cuts, diced
  • Salt and Pepper to Taste

Directions

  • Cut the vienna loaf diagonally accross the top to a depth of about 3cms
  • Cut back the opposite diagonal to form a diamond on the top of the loaf
  • Brown the bacon in a small pan
  • Combine the bacon, shallots, onion and cheeses in a bowl
  • Press into the diamonds on the top of the loaf
  • Salt and Pepper to taste
  • Cook in a 180c Oven for approx 15mins, or until the cheese is melted and the bacon has crisped
