As a cake it is almost as refreshing as tea cake. Light, fluffy yet with body.

Ingredients

  • 125g Butter
  • 1/2 Cup Sugar
  • 1 Egg
  • 1 1/2 Cups of Self Raising Flour
  • 3 Mashed Bananas
  • 1 Tbsp Bi-Carb (Dissolved in 2 Tbsp Milk)
  • 1 Tbsp Vanilla Essence

Directions

  1. Cream the butter and sugar together
  2. Add the egg, vanilla and bananas
  3. Mix well
  4. Add flour and mix well
  5. Add disolved Bi-Carb, lightly mix
  6. Bake in a pre-heated oven for 30 mins at 180c
