This is very easy and very lite. It goes really well with chicken and fish. Cheese and Tomato are destined to be used together.


  • 350g of Boccoccini Cheese in Brine
  • 300g Cherry Tomato. (Vine ripened, organic if available, they taste heaps better)
  • 3 Tbsp of Onion Chives. Finely chopped
  • 1 Large Red Onion
  • 1/4 Cup good quality Olive Oil
  • Splash of White Wine Vinegar
  • Salt and Pepper to taste


  1. Cut Cherry toms into halves
  2. Drain cheese from the brine
  3. Chop the onion chives
  4. Dice the red onion
  5. Combine and gently rotate in a large bowl
  6. Dress with oil first, then a spalsh of Wine vinegar at the end
