Creamy_Mushroom_Soup_1

Mushrooms are the most wonderful addition to a soup, they fill the void left in the absence of meat.

Ingredients

  • 2 Large Onions
  • 60g Butter
  • 2 Cloves Garlic, crushed
  • 500g Mushrooms, sliced
  • 1/4 Cup Plain Flour
  • 550ml Milk
  • 375ml Beef Stock
  • 1/4 Cup Parsley

Directions

  1. Dice onions very finely
  2. Melt Butter in a large pot and add the onion and garlic. Cook until golden brown
  3. Add mushrooms and flour, then stir well
  4. Add milk and stock to the pot stirring well for at least 2mins
  5. Bring to the boil then reduce heat to a slow simmer for a further 15mins allowing time to thicken
  6. Stir through the parsley to suit your own taste
