Creamy Mushroom Soup
Mushrooms are the most wonderful addition to a soup, they fill the void left in the absence of meat.
Ingredients
- 2 Large Onions
- 60g Butter
- 2 Cloves Garlic, crushed
- 500g Mushrooms, sliced
- 1/4 Cup Plain Flour
- 550ml Milk
- 375ml Beef Stock
- 1/4 Cup Parsley
Directions
- Dice onions very finely
- Melt Butter in a large pot and add the onion and garlic. Cook until golden brown
- Add mushrooms and flour, then stir well
- Add milk and stock to the pot stirring well for at least 2mins
- Bring to the boil then reduce heat to a slow simmer for a further 15mins allowing time to thicken
- Stir through the parsley to suit your own taste
