Lamb Slow Cooker
This is as easy as set and forget. A few occasional stirs and some good quality ingredients will ensure a top meal every time. Also very tasty on toast the next day.
The easiest way to cook this is in an actual slow cooker, however a pot on the stove can be done also.
Ingredients
- 800g Diced and trimmed lamb
- 600ml Vegetable stock
- 1 Large onion
- 3 Sliced carrots
- 1 medium bunch broccoli
- 1 cup frozen peas
- 2 large potatoes cut into discs
- 1 medium slice of jap pumpkin
- 1/2 can of corn kernels
Directions
- Add everything except the peas and the broccoli
- Simmer with lid on for 1 hr on low-medium heat
- Simmer on very low with the lid on for a further 3hrs
- Stir occasionally
- The longer you simmer the better, I have cooked a 10hr version that produced some of the tastiest lamb that literally fell apart.
- Add the peas and broccoli 45mins before you eat so they dont break down too much.
