Lamb_Slow_Cooker

This is as easy as set and forget. A few occasional stirs and some good quality ingredients will ensure a top meal every time. Also very tasty on toast the next day.

The easiest way to cook this is in an actual slow cooker, however a pot on the stove can be done also.

Ingredients

  • 800g Diced and trimmed lamb
  • 600ml Vegetable stock
  • 1 Large onion
  • 3 Sliced carrots
  • 1 medium bunch broccoli
  • 1 cup frozen peas
  • 2 large potatoes cut into discs
  • 1 medium slice of jap pumpkin
  • 1/2 can of corn kernels

Directions

  1. Add everything except the peas and the broccoli
  2. Simmer with lid on for 1 hr on low-medium heat
  3. Simmer on very low with the lid on for a further 3hrs
  4. Stir occasionally
  5. The longer you simmer the better, I have cooked a 10hr version that produced some of the tastiest lamb that literally fell apart.
  6. Add the peas and broccoli 45mins before you eat so they dont break down too much.
