This is a quick and easy way to make an all time Aussie classic.

You can make the sponge if you like, but purchased sponge works for me and slashes the prep time.


  • 1 Large Plain Sponge Cake
  • 500g Icing Sugar
  • 1/3 Cup Cocoa. You can add more to suit your tastes
  • 15g Butter
  • 1/2 Cup Milk
  • 3 Cups Desicated Coconut


  1. Sift the sugar and cocoa into a heatproof bowl
  2. Mix the milk and butter over a pan of boiling water
  3. Mix until smooth
  4. Cut the brown edges from the sponge
  5. Dip each side in the mix and lay in coconut
  6. Place on rack to cool
  7. Best cooled in the fridge for at least an hour. Best after 3 hours.
