Mushroom and Tomato Cheesy Puffs
If you are a mushroom lover then you will go bananas for these. If you can get organic vine rippened tomatoes then you will indeed be taken to another level.
Ingredients
- 1 Packet Puff Pastry
- 2 Tbsp Soft Cream Cheese
- 2 Tbsp Olive Oil
- 100g Button Mushrooms
- 2 Cloves Garlic, crushed
- 1 vine/tub Cherry Tomatoes
- 2 Tbsp grated Parmesan
Directions
This is the method, you can make as many of these as the occasion requires.
- Cut a single pastry sheet into quarters
- Fold each edge over and press down to form a 1cm border.
- Spread cream cheese over the base
- Heat oil in a pan and cook the mushrooms and garlic for 2 mins
- Remove and place on paper towel
- Once well dried place on top of cream cheese
- Add sliced tomato then sprinkle with parmesan
- Cook in the oven for 20mins at 220c or until golden
