If you are a mushroom lover then you will go bananas for these. If you can get organic vine rippened tomatoes then you will indeed be taken to another level.

Ingredients

  • 1 Packet Puff Pastry
  • 2 Tbsp Soft Cream Cheese
  • 2 Tbsp Olive Oil
  • 100g Button Mushrooms
  • 2 Cloves Garlic, crushed
  • 1 vine/tub Cherry Tomatoes
  • 2 Tbsp grated Parmesan

Directions

This is the method, you can make as many of these as the occasion requires.

  1. Cut a single pastry sheet into quarters
  2. Fold each edge over and press down to form a 1cm border.
  3. Spread cream cheese over the base
  4. Heat oil in a pan and cook the mushrooms and garlic for 2 mins
  5. Remove and place on paper towel
  6. Once well dried place on top of cream cheese
  7. Add sliced tomato then sprinkle with parmesan
  8. Cook in the oven for 20mins at 220c or until golden
