Roast Pork with Perfect Crackle
This is the fool proof way to cook an awesome roast pork. This is really this easy. It is what you serve it with and how good your crackle is that determines your skill.
Method
- Purchase good piece of meat, including a good cover of fat/crackle that is facing upwards
- Prepare the meat by oiling a large roasting pan with a little olive oil and placing it with the fat/crackle facing upwards.
- With a very sharp knife make small cuts the length of the crackle. Long lines from the front to the back and about half a knuckle deep.
- Rub olive oil all over the fat/crackle then rub salt over same area.
- Pre-heat oven to 220c
- Place roast in for 20-30 mins then reduce down to 180c
- Cook the roast 30 mins for every 500g of meat. i.e. 1.5kg roast gets a further 90 mins or so. Each piece of meat is a litle different. Cut a little piece off after 90 mins and go from there
- I cook my veges in a different pan. And I steam the greens.
