Tina’s Layered Salad
This has to be the best BBQ salad of all time. It is very creamy and full of crispy bacon so if you are watching your weight… Just have one serve. Bet you cant.
Ingredients
- 1/2 Iceburg Lettuce, Shredded
- 2 Cups frozen Peas, Thawed
- 4 Hard Boiled Eggs
- 250g Button Mushrooms, finely sliced
- 1 cup Grated Tasty Cheddar Cheese
- 1 Cup Mayo
- 1 Large Tomato
- 4 Bacon Rashes
- 2 Tbsp Sour Cream
- 2 Teaspoons Dijon Mustard
- 4 Shallots finely chopped
- 2 Tbsp freshly chopped parsley
Directions
- Place the Lettuce in the bottom of a large salad bowl
- Cover the lettuce evenly with Peas
- Push the eggs through a fine seive into a bowl
- Push down over the peas
- Layer the mushrooms and then the cheese
- Combine the mayo, cream, mustard, juice and shallots into a sauce that is poured over the cheese and covers the top
- Place the sliced tomato around the top
- Fry the diced bacon till crispy in a small pan
- Drain and top the salad
- Sprinkle Parsely over to finish
